Here is a collection of all the new recipes I tried in January. I had started out creating these recipe posts as a meal to celebrate the month but now it's morphing into all the new recipes that I'm trying. Plus I'm trying to use my own photos instead of other people's photos because that feels like the right thing to do so that means I need to make it so I can take a photo...😋
I've been trying to eliminate meat products and have been trying to find ways to get protein in my diet. At this point that means a lot of dairy but that doesn't sit quite right with me because it does affect me more than I want it to because I do like cheese and my homemade cacao drink I often make. It just doesn't taste as good when made with water... I've been trying to find ways to eat eggs but I just can't stomach a lot of them for some reason. Here is one casserole I tried...

Baked Cottage Cheese Eggs... the cottage cheese did hide the eggs a bit more than a regular egg casserole. I added spinach, spices, mushrooms and black olives. I actually liked it.

Here is a cute little cheese ball snowman. He was fun to make. I made him with cream cheese and shredded mozzarella cheese. I didn't have all the ingredients in the recipe so I used cloves for the buttons, mouth and eyes. A bay leaf for a hat and cinnamon sticks for arms with a little carrot nose whittled from a big carrot...he is really good too! You will find the actual recipe in the link below...

Mushroom and spinach lasagna... it's the first time in my life that I actually made lasagna but it turned out great! And I finally used up the lasagna noodles I had in my pantry for years ...

Vegetarian Taco Soup... I didn't have enough diced tomatoes so I added some raw ones I had. I made my own ranch and tace mixes and then used that as I didn't have any packets. Adding a dollop of sour cream on top finished it off, delighting my taste buds... I didn't have peppers to add and I made it in my insta pot instead of my crockpot...

Celery Pasta... I had some celery that needed to be used up so I decided to try this recipe. I used my potato mashed to mash the cooked veggies because I didn't want to dig out my blender. I wasn't sure what to expect but it worked well.

Zucchini Gratin with Yellow Squash... this was amazing! Probably because it had so much cheese. 😋I did add extra spices and different cheeses as well...

Winter Fruit Salad... when I was putting it together I was thinking that I just needed a blue fruit and then it would have all the colors of the chakras... for the life of me I couldn't think of any blue fruit til I searched later and found blueberries and... I actually had frozen blueberries in my freezer... I may yet add some...

This is an Egyptian Hazelnut Cake...I'm not sure why it's called Egyptian as it comes from Ukrainian cuisine if I remember correctly. Perhaps it originally came from Egypt. It took several hours to make this cake but it turned out better than I expected honestly. It's not too sweet either and has some crunchy caramel bits in it as well. I am very delighted with how it turned out even though there were a few steps I'd never done before in cooking so I learned a few new things in making this exquisite cake...

Food is another thing I like to photograph, especially if I have the energy to create an appealing scene. This is a maple chia latte drink. The recipe called for chai tea bags but I only had a homemade mix I had stirred together before Christmas so I used that instead. I just put in about as much as I thought would be in two tea bags.
