Here's a list of all the new recipes I tried this month. Some of them I tried because I had something that needed to be used up. Others I tried just because. Some of them I didn't have all the ingredients so I had to switch it with something else.

Oatmeal is hard for me to get down because of negative childhood memories but I can eat it better if it's baked. I came across this maple pecan baked oatmeal and decided to try it. My favorite part was that some of the pecans were quite toasted on top. I could've ate them like candy...

These are supposed to be cottage cheese pancakes. I added some cacao to give them a chocolate twist and even though they didn't taste bad they were so flat! Not at all like the picture!

My favorite, other than the pie below, was my favorite. I didn't have any crunchy toppings so I added Parmesan cheese.

I had some spaghetti squash that needed to be used up so I tried this. I didn't have the kind of cheese called so I used what I had.

This cottage cheese pasta sauce turned out amazing. It's better hot than cold just in case you would like to try it.😉

These honey mustard potatoes were good. My only problem with it was that I didn't taste and mustard. I guess I was comparing the taste to something like honey mustard pretzels. It was a poor comparison. I also think I might not have had the right kind of mustard...they were still good though.

I had cauliflower to use up so tried this recipe. I used raw garlic and got a little too much in the sauce so it was quite peppy.
I also tried this avocado egg recipe as I had some avocados to use up. I didn't have lime/lemon juice so I skipped that and instead of mayonnaise I used sour cream and added a number of my own spiI have no photo but you can find the recipe here:

I didn't have Gouda cheese so I used what I had and it was so 😋!

I came across this hot buttered applesauce one day when I was scrolling on Pinterest...instead of using apples I used applesauce and just heated it up instead of cooking it. It was an interesting twist to plain applesauce...

These were supposed to be chocolate covered coconut blackberry bars. I used blueberries instead. I had some shredded coconut that was who knows how many years old that I decided to use up so it could be that something was the wrong proportion, but anyway, I couldn't get them covered in chocolate so I ended up dumping the chocolate on top and spreading it out as best I could. It felt like the biggest flop I've had in a long time...

I had some pears to use up so I decided to try a pear sour cream pie. It was so delicious!
